Make this quick, creamy, and comforting cheesy rice on the stovetop. It uses simple ingredients and is ready fast, making it a perfect weeknight side dish.

Ingredients

Scale
  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cut into cubes
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the uncooked rice, salt, and pepper to the saucepan. Stir and cook for 2 minutes to lightly toast the rice.
  4. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during simmering.
  5. Remove the saucepan from the heat. Stir in the heavy cream and the cubed cream cheese until the cheese melts and the mixture becomes creamy.
  6. Stir in the shredded cheddar cheese and Parmesan cheese until fully incorporated and melted.
  7. Serve immediately as a comforting side dish.

Notes

  • For a richer flavor, substitute half the chicken broth with milk.
  • You can add 1 cup of frozen broccoli florets during the last 5 minutes of simmering the rice.
  • This recipe is a great base for meal planning; add cooked shredded chicken for a main dish.
