Ingredients
Scale
2 cups cooked and seasoned sushi rice
8 ounces imitation crab meat, shredded
4 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 cup sriracha (adjust to taste for spice)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 cup Japanese mayonnaise (Kewpie preferred)
1/4 cup unagi sauce (eel sauce)
2 tablespoons furikake seasoning
1 sheet nori seaweed, cut into thin strips for garnish
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
Prepare the sushi rice according to package directions and season it with rice vinegar while it is still warm. Spread the seasoned rice evenly in the bottom of the prepared baking dish. This is your base layer.
In a medium bowl, combine the shredded imitation crab, softened cream cheese, mayonnaise, sriracha, and sesame oil. Mix until everything is well combined and creamy.
Spread the imitation crab mixture evenly over the layer of sushi rice.
In a small bowl, whisk together the Japanese mayonnaise and unagi sauce to create a drizzle mixture. Drizzle this mixture over the crab layer.
Sprinkle the top generously with furikake seasoning.
Bake for 15 to 20 minutes, or until the topping is hot and lightly golden brown around the edges.
Remove from the oven and let it cool for 5 minutes before serving. Garnish with the cut nori strips.
Serve warm with extra nori sheets for scooping.
Notes
For a richer flavor, use Kewpie mayonnaise in both the crab mixture and the drizzle.
If you prefer a salmon sushi bake, substitute half of the imitation crab with cooked, flaked salmon.
You can add a layer of thinly sliced avocado on top after baking for extra freshness.
