Make this simple, flavorful turmeric rice side dish quickly. It features aromatic garlic and a vibrant golden color, perfect for pairing with weeknight dinners.

Ingredients

Scale
  • 1 tablespoon butter or olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup basmati rice, rinsed
  • 1 1/2 cups water or low-sodium chicken broth
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Heat the butter or oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Stir in the rinsed basmati rice, turmeric, salt, and pepper. Cook for 1 minute, stirring constantly to coat the rice.
  5. Pour in the water or broth. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  7. Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
  8. Fluff the rice gently with a fork. Stir in the fresh lemon juice, if using. Serve warm.

Notes

  • Rinsing the rice removes excess starch, resulting in fluffier grains.
  • For a richer flavor, substitute half the water with coconut milk. This is a great alternative to traditional meal planning when you want something fast.
  • This rice pairs well with grilled meats or as a base for a simple keto meal plan delivery option if you are looking for variety.
