Follow these clear steps to roast a whole chicken that results in juicy meat and shatteringly crisp skin. This recipe uses simple ingredients perfect for a Sunday dinner centerpiece.

Ingredients

Scale
  • 1 whole chicken (about 4–5 lbs)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, quartered (optional, for roasting pan)
  • 2 carrots, roughly chopped (optional, for roasting pan)

Instructions

  1. Remove the whole chicken from its packaging. Take out any giblets from the cavity. Pat the entire chicken, inside and out, completely dry using paper towels. This step is crucial for crispy skin.
  2. In a small bowl, combine the softened butter, chopped rosemary, thyme leaves, minced garlic, salt, and pepper. Mix until you have a uniform herb butter.
  3. Gently separate the skin from the breast meat using your fingers, being careful not to tear the skin. Rub about two-thirds of the herb butter mixture directly onto the breast meat under the skin. Rub the remaining butter mixture all over the outside of the chicken skin.
  4. Place one lemon half inside the chicken cavity. If using, place the quartered onion and carrots in the bottom of a roasting pan or a large oven-safe skillet.
  5. Place the prepared chicken on top of the vegetables (if using) or directly in the pan. Drizzle the olive oil over the skin.
  6. Preheat your oven to 425°F (220°C).
  7. Place the chicken in the preheated oven and roast for 15 minutes at 425°F to start crisping the skin.
  8. Reduce the oven temperature to 375°F (190°C). Continue roasting for another 50 to 70 minutes, or until a meat thermometer inserted into the thickest part of the thigh (without touching bone) reads 165°F (74°C).
  9. If the skin begins to brown too quickly, loosely tent the chicken with aluminum foil.
  10. Once cooked, remove the chicken from the oven. Let it rest on a cutting board for at least 15 minutes before carving. This allows the juices to redistribute, resulting in a juicier whole chicken.

Notes

  • For an extra crispy skin, you can skip the butter rub and instead coat the entire exterior of the chicken with a thin layer of mayonnaise before seasoning.
  • If you are interested in meal planning for the week, this chicken provides excellent leftovers for salads or sandwiches.
  • To achieve the best results without needing a sous-vide precision cooker, ensure the chicken is at room temperature for about 30 minutes before it goes into the oven.
