Learn to make tender, authentic egg noodles from scratch. These versatile noodles are perfect for soups, casseroles, and stroganoff, bringing homemade comfort to your table.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 large eggs
  • 1/4 cup water

Instructions

  1. Combine flour and salt in a large bowl.
  2. Make a well in the center and add eggs and water.
  3. Mix ingredients with a fork until a shaggy dough forms.
  4. Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Wrap dough in plastic wrap and let rest for 30 minutes.
  6. Divide dough into 4 portions. Roll out each portion thinly on a floured surface.
  7. Cut noodles into desired width using a knife or pasta cutter.
  8. Let noodles dry slightly on a floured surface or hang them on a pasta rack for about 15-20 minutes before cooking.
  9. Cook noodles in boiling salted water for 3-5 minutes, or until tender. Drain and use immediately.

Notes

  • For thinner noodles, roll the dough even thinner.
  • You can freeze uncooked noodles for later use.
  • Dust noodles with extra flour to prevent sticking.
