Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 1/2 cups eggnog
3/4 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Optional: 1/4 cup rum (for rum-flavored bread)
For the Rum Glaze:
1 cup powdered sugar
2–3 tablespoons rum
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a separate medium bowl, whisk together the eggnog, granulated sugar, melted butter, eggs, and vanilla extract. If using rum for the bread, add it here.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
While the bread cools, prepare the glaze: Whisk together the powdered sugar, rum, and vanilla extract until smooth. Add more rum or powdered sugar as needed to reach your desired consistency.
Drizzle the glaze over the cooled bread.
Notes
For mini loaves, adjust baking time accordingly, checking for doneness around 30-35 minutes.
This bread can be stored at room temperature, wrapped tightly, for up to 3 days.
Eggnog bread freezes well. Wrap it tightly in plastic wrap and then foil. It can be frozen for up to 3 months. Thaw at room temperature.
You can omit the rum glaze for a simpler loaf.
Consider this a great option for meal planning during the busy holiday season.
