Ingredients
Scale
2 cups dried elderberries
4 cups water
1 cup honey
1 tablespoon fresh ginger, sliced (optional)
1 cinnamon stick (optional)
3 whole cloves (optional)
Instructions
Combine elderberries and water in a saucepan. Bring to a boil, then reduce heat and simmer for 45 minutes.
Strain the elderberries through a fine-mesh sieve, pressing to extract as much liquid as possible. Discard the berries.
Return the liquid to the saucepan. Add ginger, cinnamon stick, and cloves if using. Simmer for another 15 minutes.
Remove from heat and strain again to remove spices.
Let the liquid cool slightly, then stir in the honey until fully dissolved.
Pour the syrup into clean jars or bottles.
Store in the refrigerator for up to 3 months or water-bath can for longer storage.
Notes
For a kid-friendly flavor, add a teaspoon of vanilla extract to the cooled syrup.
Dosage: Adults: 1 tablespoon daily. Children: 1 teaspoon daily. Increase frequency during cold and flu season.
You can substitute fresh elderberries for dried. Use 4 cups of fresh elderberries and reduce the water to 3 cups.
