Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon sriracha (or more, to taste)
  • 2 (3 ounce) packages instant ramen noodles, seasoning packets discarded
  • 2 large eggs
  • 2 green onions, thinly sliced
  • Chili oil, for drizzling

Instructions

  1. Heat sesame oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides.
  2. Add minced garlic and grated ginger to the pot and cook until fragrant, about 1 minute.
  3. Pour in chicken broth, heavy cream, soy sauce, gochujang, and sriracha. Stir to combine and bring to a simmer.
  4. Add the ramen noodles to the pot and cook according to package directions, usually 3-5 minutes, until tender.
  5. While the noodles cook, prepare the eggs. You can soft-boil them separately or poach them directly in the simmering broth for the last 3-4 minutes of cooking.
  6. Divide the ramen and broth between two bowls. Top each bowl with a cooked egg, sliced green onions, and a drizzle of chili oil.

Notes

  • For a milder flavor, reduce the amount of gochujang and sriracha.
  • Add other toppings like corn, spinach, or nori sheets if desired.
  • This recipe is a great option for a quick Asian dinner.
