This flourless chocolate torte delivers an intensely fudgy, dense, and velvety texture. It is naturally gluten-free and makes an elegant, impressive dessert perfect for special occasions or dinner parties.

Ingredients

Scale
  • 8 ounces bittersweet chocolate (60-70% cacao), chopped
  • 1/2 cup (1 stick or 113g) unsalted butter, cut into pieces
  • 3 large eggs, separated
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan and line the bottom with parchment paper.
  2. Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of simmering water (or use a microwave in short bursts). Stir until completely smooth. Remove from heat and let cool slightly.
  3. In a separate medium bowl, whisk together the 3 egg yolks, 3 whole eggs, granulated sugar, brown sugar, vanilla extract, and salt until the mixture is pale and slightly thickened, about 2 minutes.
  4. Gently whisk the slightly cooled chocolate mixture into the egg mixture until just combined. Do not overmix.
  5. In a clean, dry bowl, beat the 3 reserved egg whites with an electric mixer until stiff, glossy peaks form.
  6. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites in two additions until no white streaks remain. Work gently to keep the batter airy.
  7. Pour the batter into the prepared springform pan.
  8. Bake for 30 to 35 minutes. The edges should look set, but the center will still look slightly soft and fudgy.
  9. Let the torte cool completely in the pan on a wire rack. It will sink slightly as it cools, which is normal for this rich chocolate dessert.
  10. Once cool, carefully run a thin knife around the edge before releasing the springform side.
  11. Chill the torte for at least 4 hours, or preferably overnight, for the best dense texture.
  12. Before serving this elegant chocolate torte, dust the top generously with unsweetened cocoa powder or powdered sugar. Slice and serve cold or at room temperature.

Notes

  • For the best, most intense chocolate flavor, use high-quality bittersweet chocolate.
  • This naturally gluten-free dessert tastes even better the next day, making it a great make-ahead chocolate dessert for holidays.
  • If you prefer a glossy finish, skip the cocoa dusting and top with a simple chocolate ganache instead.
