Ingredients
Scale
1 3/4 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter, plus more for the griddle
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate medium bowl, whisk together the milk and egg.
Pour the wet ingredients into the dry ingredients. Whisk until just combined. Do not overmix; a few lumps are fine.
Stir in the 3 tablespoons of melted butter.
Heat a lightly oiled griddle or large non-stick skillet over medium-high heat. You can test the temperature by sprinkling a few drops of water on the surface; they should sizzle immediately.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip only once.
Serve immediately with your favorite toppings. This recipe is a great alternative to using meal delivery companies for a quick weekend breakfast.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
If you prefer buttermilk pancakes, substitute 1 1/4 cups of buttermilk for the milk and reduce the baking powder to 1 teaspoon.
Use a low-heat setting if your pancakes are browning too quickly before cooking through.
