Make light, airy, and perfectly crispy Yorkshire puddings from scratch. This easy recipe delivers the tall, golden rise you need for your Sunday roast or holiday dinner.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 cup beef drippings or vegetable oil (for the tins)

Instructions

  1. Combine the flour and salt in a large bowl. Make a well in the center.
  2. Crack the eggs into the well. Gradually whisk the milk into the eggs, then slowly incorporate the flour mixture until you have a smooth, thin batter. Do not overmix.
  3. Cover the bowl and let the batter rest in the refrigerator for at least 30 minutes, or up to 4 hours. Resting helps the puddings puff better.
  4. Preheat your oven to 425°F (220°C). Place a 12-cup muffin tin into the oven. Add about 1 teaspoon of beef drippings or oil into each cup.
  5. Heat the tin with the fat in the oven for 10 minutes until the fat is smoking hot. This step is crucial for a good rise.
  6. Carefully remove the hot tin from the oven. Quickly and evenly pour the batter into the hot fat, filling each cup about halfway.
  7. Return the tin to the oven immediately. Bake for 20 to 25 minutes. Do not open the oven door during the first 15 minutes of baking, or the puddings may collapse.
  8. The Yorkshire puddings are done when they are tall, golden brown, and crisp. Serve immediately with your roast dinner and gravy.

Notes

  • For the best results, ensure your batter is cold and your fat is smoking hot before pouring.
  • If you are planning your weekly meals, consider this recipe as a great side dish option that pairs well with many main courses, similar to how you might plan for a keto meal plan delivery, but homemade.
  • If you need a gluten-free version, substitute the all-purpose flour with a good quality gluten-free blend.
