A cheesy, one-pan chicken and rice casserole inspired by French onion soup flavors, perfect for easy weeknight dinners.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon Worcestershire sauce
  • 1 1/2 cups uncooked white rice
  • 1/2 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
  3. Season the chicken pieces with salt and pepper. Add the chicken to the hot skillet and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
  5. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Pour in the chicken broth, add the dried thyme and Worcestershire sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Stir in the uncooked rice.
  8. Return the browned chicken to the skillet, nestling it into the rice mixture.
  9. Cover the skillet tightly with a lid or foil.
  10. Bake for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  11. Remove the lid or foil and sprinkle the Gruyere and mozzarella cheeses evenly over the top.
  12. Bake uncovered for another 5-10 minutes, or until the cheese is melted and bubbly.
  13. Garnish with fresh parsley before serving.

Notes

  • For a deeper French onion flavor, you can caramelize the onions for a longer period, up to 20-30 minutes, over low heat.
  • This bake is make-ahead friendly. Assemble it up to the point of baking, cover, and refrigerate. Add a few extra minutes to the baking time if cooking from cold.
  • You can substitute chicken breasts for chicken thighs if preferred. Adjust cooking time as needed.
  • Consider this a great option if you’re looking for alternatives to traditional meal delivery services.
