Bake classic French toast flavor into portable, soft muffins topped with a sweet cinnamon sugar crust. This recipe is perfect for quick breakfasts or grab-and-go mornings.

Ingredients

Scale
  • 1 loaf (16 ounces) day-old bread (such as brioche or challah), cut into 1-inch cubes
  • 6 large eggs
  • 1 1/2 cups whole milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar, divided
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well or line with paper liners.
  2. Place the bread cubes evenly into the prepared muffin cups, filling each about two-thirds full.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, nutmeg, and salt until combined.
  4. Whisk in 1/4 cup of the granulated sugar into the egg mixture.
  5. Pour the egg mixture evenly over the bread cubes in the muffin cups. Gently press the bread down to help it absorb the liquid. Let the mixture sit for 10 minutes.
  6. In a small bowl, mix the remaining 1/4 cup granulated sugar with 1 tablespoon of ground cinnamon to create the topping mixture.
  7. Drizzle the melted butter evenly over the top of the soaked bread in the muffin cups.
  8. Sprinkle the cinnamon sugar topping generously over the top of each muffin cup.
  9. Bake for 20 to 25 minutes, or until the muffins are puffed, golden brown, and set in the center.
  10. Let the French toast muffins cool in the tin for 5 minutes before carefully removing them to a wire rack to cool slightly. Serve warm or at room temperature.

Notes

  • Using day-old bread helps the cubes hold their shape better during baking.
  • For a richer flavor, substitute brioche bread for standard white bread.
  • These muffins are excellent for meal planning; store leftovers in an airtight container for up to 3 days.
  • Serve with maple syrup or powdered sugar for extra sweetness.
