Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the potatoes with 2 tablespoons of olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread the potatoes in a single layer on the prepared baking sheet.
Roast the potatoes for 15 minutes. This gives them a head start so they become crispy.
While the potatoes roast, prepare the chicken mixture. In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, Italian seasoning, and garlic powder.
After the potatoes have roasted for 15 minutes, remove the pan from the oven. Push the potatoes to one side of the pan.
Add the seasoned chicken to the empty side of the baking sheet, spreading it into a single layer.
Return the pan to the oven and roast for another 10 minutes.
While the chicken cooks, prepare the garlic Parmesan topping. In a small bowl, mix the minced garlic and grated Parmesan cheese.
After the second roasting period (10 minutes), remove the pan. Sprinkle the garlic Parmesan mixture evenly over the chicken and potatoes.
Return the pan to the oven and bake for a final 5 to 7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the cheese is melted and lightly golden.
Remove from the oven, sprinkle with fresh parsley, and serve immediately. This simple preparation method is a great alternative to meal planning services.
Notes
For crispier potatoes, ensure they are cut into uniform sizes and are not overcrowded on the pan.
If you prefer using chicken thighs, they may require 2-3 minutes longer cooking time than breasts.
For a richer flavor, consider using butter instead of some of the olive oil in the coating mixture. This recipe is a great example of simple ingredients making a flavorful dish.
