- 4 cups rolled oats
- 1 cup chopped nuts (almonds, walnuts, or pecans)
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon salt
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, chopped nuts, shredded coconut, and salt. Stir well.
- In a separate small bowl, whisk together the honey or maple syrup, melted oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients. Mix until everything is evenly coated.
- Spread the mixture onto the prepared baking sheet in a thin, even layer. Do not press down too firmly.
- Bake for 25-30 minutes, or until golden brown and fragrant.
- Let the granola cool completely on the baking sheet without stirring. This is key for forming big clusters.
- Once cooled, break the granola into clusters.
Notes
- Store cooled granola in an airtight container at room temperature for up to 2 weeks.
- For extra crunch, you can bake for an additional 5 minutes, watching carefully to prevent burning.
- Add dried fruit like raisins or cranberries after the granola has cooled.
- Consider this a great alternative to some meal planning services.
