Ingredients
Scale
2 tablespoons neutral oil
1 pound boneless, skinless chicken breast, cut into 1/2-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1 cup frozen peas and carrots
3 cups cold cooked rice (day-old rice works best)
2 large eggs, lightly beaten
2 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, thinly sliced
Instructions
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add remaining 1 tablespoon of oil to the skillet. Add minced garlic and cook until fragrant, about 30 seconds.
Add frozen peas and carrots to the skillet and cook for 2-3 minutes until tender-crisp.
Push vegetables to one side of the skillet. Pour beaten eggs onto the empty side and scramble until cooked through. Break into small pieces.
Add the cooked rice to the skillet. Stir to combine with vegetables and eggs.
Return the cooked chicken to the skillet.
Pour soy sauce and sesame oil over the rice mixture. Stir well to combine and heat through, about 3-5 minutes.
Stir in sliced green onions just before serving.
Notes
For best results, use cold, day-old rice. It will be drier and less likely to clump.
You can substitute brown rice for a healthier option.
Add more chicken or vegetables to increase the protein and nutrient content.
This recipe is great for meal prep. Divide into individual containers for easy lunches or dinners throughout the week.
