Ingredients

Scale
  • 1 pound sliced corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1/2 cup Thousand Island dressing
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 4 cups cubed rye bread (about 4 slices, crusts removed)
  • 8 ounces Swiss cheese, shredded
  • 1 tablespoon butter, melted (for brushing)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the chopped corned beef, drained sauerkraut, cream of mushroom soup, Thousand Island dressing, Dijon mustard, pepper, and water. Mix these ingredients until they are just combined.
  3. Gently fold in the cubed rye bread into the corned beef mixture.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the shredded Swiss cheese over the top of the mixture.
  6. Brush the melted butter lightly over the top layer of cheese and bread cubes for extra browning.
  7. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese is melted and bubbly.
  8. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For an extra tangy flavor, you can add 1 tablespoon of caraway seeds to the mixture.
  • If you do not have rye bread, use pumpernickel or a sturdy white bread, but rye gives the most authentic flavor.
  • This bake is excellent served with a side of dill pickles or coleslaw.
