Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the melted butter and granulated sugar.
  3. In a separate bowl, whisk together the cocoa powder, baking powder, and salt.
  4. Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  8. While the brownies bake, prepare the frosting. In a medium bowl, whisk together the powdered sugar and milk until smooth. Stir in the vanilla extract.
  9. Once the brownies are out of the oven, let them cool completely in the pan.
  10. Spread the frosting evenly over the cooled brownies.
  11. Sprinkle the mini marshmallows over the frosting.
  12. For toasted marshmallows, you can carefully use a kitchen torch or place the brownies under the broiler for 1-2 minutes, watching closely to prevent burning.
  13. Cut into squares and serve.

Notes

  • For make-ahead, bake the brownies and let them cool completely. Store unfrosted brownies in an airtight container at room temperature for up to 3 days. Frost and toast the marshmallows just before serving.
  • Store frosted brownies in an airtight container at room temperature for up to 2 days. If you toasted the marshmallows, they are best enjoyed the same day.
  • You can substitute a store-bought frosting if you prefer.
