Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1/2 cup hot honey
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 cup cooked rice or quinoa
1 cup chopped broccoli florets
1/2 cup shredded carrots
1/4 cup pickled red onions
1/4 cup chopped cilantro
Optional toppings: sliced avocado, sesame seeds
Instructions
Preheat your air fryer to 400°F (200°C) or heat a skillet over medium-high heat.
In a bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper.
If using an air fryer, place the chicken in a single layer and cook for 10-12 minutes, or until cooked through. If using a skillet, cook the chicken for 6-8 minutes per side, until browned and cooked through.
While the chicken cooks, whisk together the hot honey, soy sauce, and apple cider vinegar in a small bowl.
Once the chicken is cooked, add it to the skillet (if using) or transfer it to a bowl. Pour the hot honey sauce over the chicken and toss to coat.
Assemble your bowls: Divide the cooked rice or quinoa among four meal prep containers. Top with the hot honey chicken, broccoli florets, shredded carrots, pickled red onions, and cilantro.
Add any other desired toppings like avocado or sesame seeds.
Store in the refrigerator for up to 4 days. Reheat before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the hot honey sauce.
You can substitute chicken breast for thighs, but adjust cooking time as needed.
