1/2 cup grated Parmesan cheese, plus more for serving
Salt and black pepper to taste
Instructions
Place a large pot or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned. Drain off excess grease.
Add the olive oil, onion, carrots, and celery to the pot with the sausage. Cook until the vegetables soften, about 5 to 7 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and add the diced tomatoes (with their juice), Italian seasoning, oregano, and red pepper flakes if you are using them. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover, and let it simmer for 10 minutes to allow the flavors to combine.
Add the cubed cream cheese to the pot. Stir constantly until the cream cheese melts completely into the broth, creating a creamy base.
Add the tortellini and cook according to package directions, usually about 5 to 7 minutes, until tender.
Stir in the chopped kale and cook until it wilts, about 2 minutes.
Remove the pot from the heat. Stir in the heavy cream and Parmesan cheese until fully incorporated.
Taste the soup and add salt and pepper as needed. Serve immediately with extra Parmesan cheese on top.
Notes
For an alternative to tortellini, you can use 1 cup of dried ditalini or orzo pasta; add it when you add the broth and adjust cooking time.
If you are focusing on meal planning, this soup freezes well before adding the cream and tortellini. Thaw, then reheat, adding cream and tortellini before the final simmer.
This recipe is a great alternative to heavier options found with meal delivery companies; it uses fresh ingredients you control.
