Ingredients
Scale
1 (9 inch) unbaked pie crust
1 tbsp olive oil
8 oz mushrooms, sliced
5 oz fresh spinach
1/2 cup chopped onion
1/2 cup chopped asparagus
4 large eggs
1 1/2 cups half-and-half
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded Gruyere cheese
Instructions
Preheat your oven to 375°F (190°C).
Press the unbaked pie crust into a 9-inch pie plate.
Heat olive oil in a skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
Add spinach and onion to the skillet. Cook until spinach is wilted, about 3-5 minutes. Stir in asparagus and cook for 1 minute more. Drain any excess liquid.
Spread the cooked vegetables evenly over the bottom of the pie crust.
Sprinkle the shredded Gruyere cheese over the vegetables.
In a medium bowl, whisk together eggs, half-and-half, salt, and pepper until well combined.
Carefully pour the egg mixture over the vegetables and cheese in the pie crust.
Bake for 40-50 minutes, or until the center is set and the top is golden brown. If the crust edges start to brown too quickly, cover them with foil.
Let the quiche cool for at least 10 minutes before slicing and serving.
Notes
For a make-ahead option, prepare the quiche up to the point of baking, cover, and refrigerate. Bake the next day, adding a few extra minutes to the baking time.
To reheat a slice, place it on a baking sheet in a 350°F (175°C) oven for about 10-15 minutes, or until warmed through.
Feel free to swap vegetables based on seasonality or preference. Broccoli, bell peppers, or sun-dried tomatoes are great additions.
