Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
In a shallow dish, combine the almond flour, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
In a second shallow dish, beat the eggs.
Dip each pounded chicken cutlet first into the egg mixture, letting excess drip off.
Dredge the cutlet thoroughly in the almond flour mixture, pressing gently to make the coating adhere.
Place the coated cutlets on the prepared baking sheet.
Bake for 15 minutes.
Remove the chicken from the oven. Top each cutlet with marinara sauce and a slice of mozzarella cheese, followed by the remaining 1/2 cup of Parmesan cheese.
Return to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 165°F or 74°C).
If you prefer a crispier crust, you may pan-fry the coated cutlets in olive oil for 3 minutes per side before topping and baking.
Notes
For an air fryer method, cook the coated cutlets at 375°F (190°C) for 10 minutes, flip, top with sauce and cheese, and cook for an additional 3 to 5 minutes.
Use a marinara sauce that contains no added sugar to keep the meal keto-friendly.
