Ingredients
Scale
8 oz cream cheese, softened
1/4 cup powdered sugar substitute (like erythritol or xylitol)
1 tsp cinnamon
1/2 tsp vanilla extract
4 large eggs
1/4 cup almond flour
1 tbsp psyllium husk powder
1 tsp baking powder
1/4 tsp salt
Butter or coconut oil for cooking
Instructions
In a bowl, mix softened cream cheese with powdered sugar substitute, cinnamon, and vanilla extract until smooth.
In a separate bowl, whisk the eggs.
In another bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
Add the dry ingredients to the whisked eggs and mix well.
Gently fold the cream cheese mixture into the egg and almond flour mixture until just combined. Do not overmix.
Heat a lightly greased non-stick skillet or air fryer basket over medium heat.
Pour about 1/4 cup of batter per roll-up onto the skillet or into the air fryer.
Cook for 3-5 minutes per side, or until golden brown and cooked through. For air fryer, cook at 375°F (190°C) for 5-7 minutes, flipping halfway.
Serve warm.
Notes
For a crispier texture, ensure your cream cheese is fully softened.
