A comforting and deconstructed take on classic lasagna, this one-pot soup features tender noodles in a rich tomato-cheese broth. It’s an easy weeknight meal perfect for the whole family.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups (32 oz) crushed tomatoes
  • 4 cups (32 oz) chicken broth or vegetable broth
  • 1 cup (8 oz) ricotta cheese
  • 1/2 cup (4 oz) cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 cup lasagna noodles, broken into pieces
  • Salt and black pepper to taste
  • Fresh basil, chopped, for garnish
  • Shredded mozzarella cheese, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes and broth. Bring to a simmer.
  5. In a small bowl, whisk together ricotta cheese, cream cheese, and Parmesan cheese until smooth.
  6. Stir the cheese mixture into the simmering soup until well combined and creamy.
  7. Add the broken lasagna noodles to the pot. Cook according to package directions, or until tender, stirring occasionally to prevent sticking.
  8. Season the soup with salt and black pepper to taste.
  9. Ladle the soup into bowls. Garnish with fresh basil and shredded mozzarella cheese.

Notes

  • For a dairy-free version, use a dairy-free ricotta and cream cheese alternative, and omit the mozzarella garnish.
  • You can also make this in an Instant Pot or slow cooker. For Instant Pot, sauté sausage and aromatics, then add liquids and noodles and cook on high pressure for 5 minutes. For slow cooker, brown sausage and sauté aromatics separately, then combine all ingredients except noodles in the slow cooker and cook on low for 4-6 hours, adding noodles during the last 30 minutes of cooking.
  • This soup is great for meal planning and can be reheated easily.
