Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 cup grated zucchini (about 1 medium)
1/2 cup milk
1/4 cup powdered sugar (for glaze)
1 tablespoon lemon juice (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, and salt.
In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract, lemon juice, and lemon zest.
Grate your zucchini. Squeeze out any excess moisture from the grated zucchini using a paper towel or clean kitchen towel.
Add the grated zucchini and milk to the wet ingredients and mix until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
While the bread cools, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
Drizzle the glaze over the cooled bread.
Notes
For a brighter lemon flavor, add an extra teaspoon of lemon zest.
You can substitute buttermilk for milk for a richer flavor.
This bread freezes well. Wrap cooled slices tightly in plastic wrap and then in foil.
For a more intense lemon flavor, you can poke holes in the warm bread and brush with a lemon syrup made from equal parts lemon juice and sugar, heated until the sugar dissolves.
