Ingredients
Scale
1 pound elbow macaroni
1/2 cup (1 stick) unsalted butter
1/2 cup all-purpose flour
3 cups whole milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
4 cups shredded sharp cheddar cheese
2 cups shredded Gruyere cheese
Instructions
Cook macaroni according to package directions. Drain and set aside.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until lightly golden.
Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until sauce thickens, about 5-7 minutes.
Remove from heat. Stir in salt, pepper, and paprika.
Add cheddar and Gruyere cheeses, stirring until melted and smooth.
Add cooked macaroni to the cheese sauce and stir to coat.
Serve immediately for a creamy stovetop version, or transfer to a baking dish and top with breadcrumbs for a baked version.
Notes
For a baked version, top with 1 cup of breadcrumbs mixed with 2 tablespoons of melted butter before baking at 375°F (190°C) for 20-25 minutes, or until golden brown.
This recipe reheats well. To reheat, gently warm on the stovetop with a splash of milk or in the oven at a low temperature.
This dish is a crowd-pleaser and a perfect addition to holiday meals.
