Ingredients
Scale
12 large eggs
1 pound breakfast sausage
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
12 large flour tortillas
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Cook breakfast sausage in a skillet over medium heat until browned. Drain excess grease.
While sausage cooks, whisk eggs in a bowl with salt and pepper.
Heat olive oil in a non-stick skillet over medium heat. Pour in eggs and scramble until cooked through.
In a large bowl, combine cooked sausage, scrambled eggs, cheddar cheese, and Monterey Jack cheese. Mix well.
Warm tortillas slightly to make them pliable.
Spoon about 1/2 cup of the filling onto the center of each tortilla.
Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a burrito.
Wrap each burrito individually in plastic wrap or foil.
Place wrapped burritos in a freezer-safe bag or container. Freeze for up to 2 months.
To reheat, remove from wrapping. Microwave on high for 1-2 minutes, or until heated through. For a crispier exterior, wrap in foil and bake at 350°F (175°C) for 15-20 minutes.
Notes
For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the egg mixture.
Consider adding black beans or diced potatoes for extra heartiness.
These burritos are a great option for meal planning and can be customized with your favorite breakfast ingredients.
They are a convenient alternative to some meal delivery companies.
