Ingredients
Scale
3 lbs Russet potatoes, peeled and quartered
1 cup whole milk
8 oz cream cheese, softened
1/2 cup unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 cup sour cream
1 cup shredded sharp cheddar cheese, divided
4 slices bacon, cooked and crumbled
2 green onions, sliced (for topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Place the peeled and quartered potatoes in a large pot and cover with water. Add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes.
Drain the potatoes well and return them to the hot pot. Mash the potatoes until smooth.
Add the milk, softened cream cheese, butter, salt, and pepper to the mashed potatoes. Mix until the ingredients are fully incorporated and the mixture is creamy.
Stir in the sour cream and half of the shredded cheddar cheese until just combined. Do not overmix.
Fold in the crumbled bacon.
Spread the potato mixture evenly into the prepared baking dish.
Sprinkle the remaining half cup of cheddar cheese over the top of the casserole.
Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
Remove from the oven and sprinkle with sliced green onions before serving.
Notes
For a make-ahead option, assemble the entire casserole, cover it tightly with foil, and refrigerate for up to 2 days. When ready to bake, let it sit at room temperature for 30 minutes, then bake as directed, adding 5 to 10 minutes to the baking time if needed.
If you are planning meals for the week, this recipe pairs well with simple meal planning strategies.
You can substitute turkey bacon for regular bacon if desired.
