Enjoy classic Mexican street corn, also known as elote, grilled to perfection and coated in a creamy, tangy mixture of mayonnaise, lime, Cotija cheese, and chili powder. This recipe is perfect for summer gatherings and potlucks.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled Cotija cheese
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until kernels are tender and lightly charred, about 8-10 minutes.
  3. While the corn is grilling, mix together the mayonnaise, Cotija cheese, lime juice, chili powder, and cayenne pepper (if using) in a small bowl.
  4. Once the corn is grilled, carefully brush the mayonnaise mixture evenly over each ear of corn.
  5. Return the corn to the grill for another 1-2 minutes, until the topping is lightly toasted.
  6. Sprinkle with fresh cilantro before serving.

Notes

  • For an off-the-cob version (esquites), cut the kernels off the cob after grilling and mix them with the sauce and toppings.
  • You can substitute mayonnaise with Mexican crema or sour cream for a different flavor profile.
  • Grated Parmesan cheese can be used if Cotija cheese is unavailable.
  • For a spicier kick, add more cayenne pepper or a dash of hot sauce to the mayonnaise mixture.
  • Try adding Tajín seasoning or crushed hot Cheetos for a modern twist.
