An iconic New Orleans sandwich featuring layers of Italian meats, cheeses, and a zesty olive salad on a sesame loaf, perfect for picnics or parties.

Ingredients

Scale
  • 1 loaf (about 10–12 inches) round sesame Italian bread
  • 1/2 cup olive salad (recipe below)
  • 1/4 pound thinly sliced mortadella
  • 1/4 pound thinly sliced Genoa salami
  • 1/4 pound thinly sliced capicola
  • 1/4 pound thinly sliced ham
  • 1/4 pound thinly sliced provolone cheese
  • 1/4 pound thinly sliced Swiss cheese
  • 1/4 cup extra virgin olive oil
  • 1/4 cup mayonnaise

Instructions

  1. Slice the top third off the sesame bread horizontally. Hollow out the bottom half of the bread, leaving about a 1/2-inch thick shell.
  2. Spread the olive salad evenly over the bottom half of the bread.
  3. Layer the mortadella, Genoa salami, capicola, and ham over the olive salad.
  4. Top the meats with the provolone and Swiss cheeses.
  5. In a small bowl, whisk together the extra virgin olive oil and mayonnaise. Spread this mixture on the cut side of the top half of the bread.
  6. Place the top half of the bread onto the layered ingredients.
  7. Wrap the sandwich tightly in plastic wrap, then in aluminum foil. Place a heavy object (like a cutting board with cans on top) on the sandwich. Refrigerate for at least 4 hours, or preferably overnight.
  8. To serve, unwrap the sandwich and slice it into wedges.

Notes

  • For the olive salad: Combine 1 cup chopped green olives, 1/2 cup chopped black olives, 1/4 cup chopped pimento-stuffed olives, 1/4 cup chopped giardiniera (mixed pickled vegetables), 2 tablespoons chopped capers, 1 tablespoon chopped fresh parsley, 1 clove minced garlic, 2 tablespoons extra virgin olive oil, and 1 tablespoon red wine vinegar. Mix well and let sit for at least 30 minutes for flavors to meld.
  • You can prepare the olive salad and assemble the sandwich a day in advance.
  • The pressing step is crucial for melding the flavors and making the sandwich easier to slice.
  • This sandwich is ideal for make-ahead meal planning for gatherings.
