Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup peach preserves
1/4 cup chopped pecans (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
Spread the peach preserves evenly over the crust.
Crumble the remaining one-third of the dough over the peach preserves. Sprinkle with chopped pecans, if desired.
Bake for 30-35 minutes, or until the topping is golden brown and the edges are set.
Let the bars cool completely in the pan before cutting into squares.
Notes
For cleaner slices, chill the bars in the refrigerator for at least 30 minutes before cutting.
You can substitute other fruit preserves, such as apricot or raspberry, for the peach preserves.
Store the bars in an airtight container at room temperature for up to 3 days.
