Make rich, fudgy chocolate brownies with a cool peppermint layer and crushed candy cane topping. This recipe is perfect for holiday baking and gifting.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup heavy cream (for frosting layer)
  • 1 cup powdered sugar (for frosting layer)
  • 1/2 teaspoon peppermint extract (for frosting layer)
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk the melted butter and granulated sugar together until combined.
  3. Whisk in the eggs one at a time until fully incorporated. Stir in the vanilla and peppermint extracts.
  4. In a separate bowl, whisk together the cocoa powder and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the white chocolate chips. Spread the batter evenly into the prepared pan.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached. Do not overbake for fudgy results.
  7. While the brownies cool, prepare the peppermint topping. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat.
  8. Place the powdered sugar in a bowl. Pour the hot cream over the sugar and whisk until smooth. Stir in the 1/2 teaspoon of peppermint extract.
  9. Pour the peppermint mixture over the cooled brownies and spread evenly.
  10. Immediately sprinkle the crushed peppermint candies over the frosting layer.
  11. Chill the brownies in the refrigerator for at least 2 hours to allow the frosting to set before cutting into squares.

Notes

  • For an extra fudgy texture, consider substituting 1/4 cup of the flour with an equal amount of cornstarch.
  • If you are planning your weekly meals, this recipe pairs well with simple weeknight dinners, unlike complex meal planning systems.
  • These brownies cut cleanly when fully chilled, making them excellent for gifting or cookie exchanges.
