Ingredients

Scale
  • 2 tbsp vegetable oil
  • 1 cup cooked, chilled day-old white or jasmine rice
  • 1/2 cup diced cooked chicken or firm tofu (optional)
  • 1/2 cup fresh or canned pineapple chunks (drained if canned)
  • 1/2 cup mixed frozen peas and carrots
  • 1/4 cup diced yellow onion
  • 1 clove garlic, minced
  • 1 large egg, lightly beaten
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp fish sauce (optional, for depth)
  • 1/2 tsp sugar
  • 1/4 tsp ground white pepper
  • 2 green onions, sliced, for garnish
  • 1/4 cup chopped cashews (optional, for crunch)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten egg and quickly scramble until just set. Remove the egg from the skillet and set it aside.
  2. Add the remaining 1 tablespoon of oil to the skillet. Add the onion and cook for 2 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the cooked chicken or tofu (if using) and the frozen peas and carrots to the skillet. Stir fry for 2-3 minutes until heated through.
  4. Push the ingredients to one side of the skillet. Add the cold rice to the empty side and break it up with your spatula. Let the rice cook undisturbed for 1 minute to get slightly crispy.
  5. Stir the rice together with the vegetables and protein. Add the pineapple chunks.
  6. In a small bowl, whisk together the soy sauce, fish sauce (if using), sugar, and white pepper. Pour the sauce mixture over the rice.
  7. Stir constantly for 2-3 minutes until the rice is evenly coated and heated through.
  8. Return the cooked egg to the skillet and mix everything together. Taste and adjust seasoning if needed.
  9. Serve immediately, garnished with sliced green onions and chopped cashews. Consider serving this easy fried rice inside a hollowed-out pineapple half for presentation.

Notes

  • Using cold, day-old rice prevents the final dish from becoming mushy. If you must use fresh rice, spread it on a baking sheet and chill it in the freezer for 15 minutes before cooking.
  • For a vegetarian option, skip the chicken and use firm tofu, pressing out excess water before dicing and cooking.
  • If you are looking for alternatives to traditional takeout, this recipe is a great starting point for your meal planning.
  • If you are interested in structured eating, compare this to a keto meal plan delivery option for variety.
