This recipe for slow cooker pork and sauerkraut delivers tender, flavorful pork with tangy sauerkraut using minimal effort. It is a classic comfort food dish, often served for New Year’s traditions for good luck.

Ingredients

Scale
  • 3 lb pork shoulder roast
  • 1 (32 ounce) bag sauerkraut, drained
  • 1 large yellow onion, sliced
  • 2 medium apples, peeled and sliced
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the sliced onion on the bottom of your slow cooker.
  2. Rinse the pork shoulder lightly and place it on top of the onions.
  3. In a bowl, mix the drained sauerkraut, sliced apples, chicken broth, brown sugar, caraway seeds, salt, and pepper.
  4. Pour the sauerkraut mixture evenly over the pork roast.
  5. Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is easily shredded with a fork.
  6. Remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat.
  7. Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture. Let it cook for another 15 minutes to heat through.
  8. Serve this hearty pork and sauerkraut dinner hot, perhaps with mashed potatoes or rye bread.

Notes

  • For extra flavor, you can sear the pork roast in a skillet with a little oil before placing it in the slow cooker.
  • If you prefer a thicker sauce, remove about 1 cup of the liquid before shredding the pork, mix it with 1 tablespoon of cornstarch, and return it to the slow cooker to thicken during the last 30 minutes of cooking.
  • This recipe is excellent for making ahead; leftovers reheat well.
