A smooth, spreadable pumpkin butter infused with warm spices, perfect for toast, pancakes, or as an edible gift.

Ingredients

Scale
  • 4 cups pumpkin puree (from about 2 lbs pie pumpkins)
  • 1 cup apple cider
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 tablespoon lemon juice

Instructions

  1. Combine pumpkin puree, apple cider, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, and cloves in a large saucepan.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce heat to low and simmer, uncovered, for 1 to 1.5 hours, stirring frequently to prevent sticking. The mixture should thicken to a spreadable consistency.
  4. Stir in lemon juice.
  5. Remove from heat and let cool completely.
  6. Transfer to clean jars for storage.

Notes

  • Store in the refrigerator for up to 3 weeks.
