1 can (15 oz) pumpkin puree
1 can (12 oz) evaporated milk
2 large eggs
1 cup granulated sugar
2 teaspoons pumpkin pie spice
1 box (15.25 oz) spice cake mix
1 cup chopped pecans (optional)
1 cup (2 sticks) unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a large bowl, combine the pumpkin puree, evaporated milk, eggs, granulated sugar, and pumpkin pie spice. Mix well.
Pour the pumpkin mixture evenly into the prepared baking dish.
Evenly sprinkle the dry spice cake mix over the pumpkin mixture.
If using, sprinkle the chopped pecans over the cake mix.
Pour the melted butter evenly over the cake mix and pecans.
Bake for 50-60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool slightly before serving. It is best served warm.
Notes
For a pecan streusel topping, mix 1 cup chopped pecans with 1/4 cup brown sugar and 2 tablespoons melted butter before sprinkling over the cake mix.
