A make-ahead pumpkin spice French toast casserole that bakes up golden and delicious for an effortless holiday or weekend breakfast.

Ingredients

Scale
  • 1 loaf (1 pound) challah or brioche bread, cut into 1-inch cubes
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • For the topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup cold unsalted butter, cut into cubes

Instructions

  1. Arrange bread cubes in a single layer in a greased 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, brown sugar, pumpkin pie spice, vanilla extract, and salt until well combined.
  3. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are moistened. Gently press down on the bread to help it absorb the custard.
  4. If using, sprinkle chopped nuts over the top.
  5. Cover the baking dish tightly with plastic wrap and refrigerate overnight (or for at least 4 hours).
  6. Preheat your oven to 350°F (175°C).
  7. Prepare the topping: In a medium bowl, combine flour, brown sugar, granulated sugar, and pumpkin pie spice. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Remove the plastic wrap from the baking dish. Sprinkle the topping evenly over the French toast casserole.
  9. Bake for 45-55 minutes, or until the casserole is puffed, golden brown, and a knife inserted into the center comes out clean.
  10. Let the casserole cool for a few minutes before serving.
