Ingredients
Scale
1 cup rolled oats (certified gluten-free if needed)
1/2 cup pumpkin puree
1/4 cup plant-based protein powder (vanilla or unflavored)
2 tablespoons almond butter or peanut butter
2 tablespoons maple syrup
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
Pinch of salt
Optional: 2 tablespoons chia seeds or flax seeds
Instructions
In a medium bowl, combine the rolled oats, protein powder, pumpkin pie spice, and salt.
Add the pumpkin puree, almond butter, maple syrup, and vanilla extract to the bowl.
Stir everything together until well combined. The mixture should be thick and slightly sticky. If it seems too dry, add a teaspoon of water or more pumpkin puree. If it seems too wet, add a tablespoon more oats.
Stir in chia seeds or flax seeds if using.
Roll the mixture into small balls, about 1 inch in diameter.
Place the bites on a plate or baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow the bites to firm up.
Store in an airtight container in the refrigerator.
Notes
For a different flavor, try adding a pinch of cinnamon and nutmeg instead of pumpkin pie spice.
You can substitute other nut or seed butters for almond or peanut butter.
These bites are great for a post-workout snack or a healthy on-the-go treat.
Consider these for your meal planning to have healthy snacks readily available.
