Ingredients
Scale
1.5 pounds sweet potatoes, peeled and cut into 1-inch cubes
1 cup seedless red grapes
2 tablespoons olive oil
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon balsamic glaze (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the sweet potato cubes with olive oil, rosemary, salt, and pepper until evenly coated.
Spread the sweet potatoes in a single layer on a large baking sheet.
Roast for 20 minutes.
Add the grapes to the baking sheet with the sweet potatoes.
Continue roasting for another 10-15 minutes, or until the sweet potatoes are tender and lightly browned, and the grapes are softened and slightly burst.
Drizzle with balsamic glaze, if desired, before serving.
Notes
For a more intense flavor, you can add a clove of minced garlic to the sweet potatoes before roasting.
Feel free to substitute thyme for rosemary if you prefer.
This dish pairs well with roasted meats or as part of a vegetarian meal.
