A quick and creamy salmon Florentine recipe with spinach and garlic, perfect for a weeknight dinner.

Ingredients

Scale
  • 1.5 lbs salmon fillets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the salmon fillets dry and season with salt and pepper.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon for 2-3 minutes per side until golden brown. Remove salmon from the skillet and set aside.
  3. Add butter to the same skillet. Once melted, add minced garlic and chopped shallot. Sauté until fragrant, about 1 minute.
  4. Add the fresh spinach to the skillet, stirring until it wilts down.
  5. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and red pepper flakes. Season with salt and pepper to taste.
  6. Return the salmon fillets to the skillet, nestling them into the sauce.
  7. Transfer the skillet to the preheated oven and bake for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Serve immediately with lemon wedges.

Notes

  • Serve over pasta, rice, or with crusty bread to soak up the sauce.
  • For a richer sauce, use half-and-half instead of heavy cream.
  • Add sliced mushrooms with the garlic and shallots for extra flavor and texture.
