Make a batch of these portable, freezer-friendly breakfast roll-ups on Sunday for easy grab-and-go meals all week. They are perfect for busy mornings and kid-friendly.

Ingredients

Scale
  • 1 pound breakfast sausage
  • 12 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 cans (8 ounces each) refrigerated crescent rolls or 12 small flour tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled. Drain off any excess grease.
  3. While the sausage is cooking, whisk together the eggs, milk, salt, and pepper in a medium bowl.
  4. Pour the egg mixture into the skillet with the cooked sausage. Cook over medium-low heat, stirring occasionally, until the eggs are almost set. Stir in the shredded cheddar cheese until melted.
  5. If using crescent rolls, unroll the dough and separate it into triangles. If using tortillas, lay them flat.
  6. Spoon about 1/4 cup of the sausage and egg mixture onto the wider end of each crescent roll triangle or evenly across each tortilla.
  7. Roll up the crescent rolls tightly, starting from the wide end. If using tortillas, fold in the sides and then roll up from the bottom.
  8. Place the roll-ups seam-side down on the prepared baking sheet.
  9. Bake for 15-20 minutes, or until golden brown and cooked through.

Notes

  • For freezer-friendly meals, let the roll-ups cool completely. Wrap each one individually in plastic wrap, then place them in a freezer-safe bag or container.
  • To reheat, remove the plastic wrap and microwave on high for 1-2 minutes, or until heated through. You can also reheat them in a 350°F (175°C) oven for about 10-15 minutes.
  • These are great for meal planning and can be a convenient alternative to meal delivery companies.
