Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups water or low-sodium broth
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef or sausage and cook until browned. Drain off any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the marinara sauce, diced tomatoes, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  4. Pour in the water or broth. Stir well to combine.
  5. Add the broken lasagna noodles to the skillet, making sure they are mostly submerged in the liquid.
  6. Bring the mixture back to a gentle simmer. Cover the skillet, reduce the heat to medium-low, and cook for 12 to 15 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  7. While the pasta cooks, mix the ricotta cheese, egg, and Parmesan cheese together in a small bowl. Set aside.
  8. Once the pasta is cooked, remove the skillet from the heat. Spread the ricotta mixture evenly over the top of the meat sauce.
  9. Sprinkle the mozzarella cheese over the ricotta layer. Cover the skillet again and let it stand for 5 minutes, allowing the cheese to melt and the ricotta to set slightly.
  10. Serve directly from the skillet. This simple recipe is a great alternative to using meal planning services for a quick dinner.

Notes

  • For a richer flavor, use Italian sausage instead of ground beef.
  • If you want to incorporate vegetables, add chopped mushrooms or spinach when you cook the onions.
  • This recipe works well for meal planning if you portion it out after cooking.
