Easy dump-and-go crockpot beef and potatoes for a tender, flavorful family meal.

Ingredients

Scale
  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1.5 pounds baby red potatoes, quartered
  • 1 packet (1 ounce) dry onion soup mix
  • 1 tablespoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the cubed beef chuck roast in the bottom of your slow cooker.
  2. Add the quartered baby red potatoes over the beef.
  3. In a small bowl, mix together the dry onion soup mix, garlic powder, rosemary, thyme, and black pepper. Sprinkle this mixture evenly over the beef and potatoes.
  4. Pour the beef broth over everything in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  6. About 30 minutes before serving, melt the butter in a small skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  7. Stir the garlic butter into the slow cooker.
  8. Stir in the fresh parsley just before serving.

Notes

  • For best results, use beef chuck roast as it becomes very tender when slow-cooked.
  • You can substitute Yukon Gold potatoes if baby red potatoes are unavailable.
  • Serve hot as a complete meal or with a side salad.
