Welcome! I’m Sarah, and I’m so happy you’re here. This slow cooker chicken stew recipe is the definition of comfort food. It is hearty, packed with tender chicken and vegetables, and finishes with a creamy broth. It is a hands-off, dump-and-go meal perfect for busy weeknights or cozy fall dinners.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups potatoes, cubed (Yukon Gold or Russet)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1/2 cup dry white wine (optional, for flavor depth)
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup heavy cream or milk
  • 1 cup frozen peas

Instructions

  1. Place the chicken, onion, carrots, celery, and potatoes into your slow cooker.
  2. Sprinkle the thyme, rosemary, garlic powder, salt, and pepper over the ingredients.
  3. Pour the chicken broth and white wine (if using) over everything in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, whisk together the flour and cold water until smooth to create a slurry.
  7. Stir the flour slurry into the stew. Cover and cook on HIGH for 15 minutes, or until the stew has thickened slightly.
  8. Stir in the heavy cream and frozen peas. Cook for another 5 to 10 minutes, until the peas are heated through and the stew is creamy. Do not let it boil after adding the cream.
  9. Taste and adjust seasoning if needed. Serve this hearty slow cooker dinner hot.

Notes

  • For the best flavor, use chicken thighs instead of breasts; they stay more tender during the long cooking time.
  • If you skip the white wine, replace it with an extra 1/2 cup of chicken broth or a splash of apple cider vinegar for brightness.
  • This recipe is budget friendly; use frozen vegetables to save on prep time.
  • Serve this tender chicken stew over mashed potatoes or with warm biscuits for a complete meal.
