Make tender, shredded beef and rich au jus in your slow cooker for easy and delicious French dip sandwiches. Perfect for game day or a weeknight meal.

Ingredients

Scale
  • 3-pound beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 hoagie rolls, split
  • 1 tablespoon butter, softened
  • 1 cup shredded provolone or Swiss cheese (optional)

Instructions

  1. Pat the beef chuck roast dry with paper towels. Season all sides with salt, pepper, garlic powder, and onion powder.
  2. Place the seasoned roast in your slow cooker.
  3. In a small bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary. Pour this mixture over the roast.
  4. Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the beef is fork-tender.
  5. Remove the roast from the slow cooker and shred it using two forks. Skim any excess fat from the cooking liquid.
  6. While the beef is resting, split the hoagie rolls and spread the softened butter on the cut sides. Place them cut-side up on a baking sheet.
  7. If using cheese, sprinkle it over the buttered rolls. Broil for 1-2 minutes until lightly golden and the cheese is melted.
  8. Return the shredded beef to the slow cooker with the au jus. Stir to combine.
  9. Spoon the shredded beef mixture into the buttered and toasted rolls.
  10. Serve immediately with the warm au jus for dipping.

Notes

  • For a richer au jus, you can strain the cooking liquid and simmer it on the stovetop to reduce it slightly.
  • You can prepare the beef and au jus a day in advance. Store them separately in the refrigerator and reheat before assembling the sandwiches.
  • Other cheese options include mozzarella or Gruyere.
  • For a spicier kick, add a pinch of red pepper flakes to the au jus.
