Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup water
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken thighs in the bottom of your slow cooker.
  2. In a bowl, combine uncooked rice, chicken broth, water, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, and pepper. Stir well.
  3. Pour the rice mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and rice is tender.
  5. Shred the chicken directly in the slow cooker with two forks. Stir to combine with the rice.
  6. Garnish with fresh parsley before serving.

Notes

  • For best results, use white rice. Brown rice will require a longer cooking time.
  • Adjust herbs to your preference. Other herbs like oregano or dill can also be used.
  • Ensure the liquid fully covers the rice to prevent it from drying out.
  • This recipe is great for meal planning and can be reheated easily.
