Ingredients

Scale
  • 3–4 lb boneless beef chuck roast
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup beef broth, salsa, or enchilada sauce
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • Corn or flour tortillas
  • Optional Toppings: shredded lettuce, diced tomatoes, chopped onions, cilantro, shredded cheese, sour cream, salsa, avocado

Instructions

  1. Pat the beef chuck roast dry with paper towels.
  2. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Rub the spice mixture all over the beef roast.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side.
  4. Place the sliced onion and minced garlic in the bottom of your slow cooker.
  5. Place the seared roast on top of the onions and garlic.
  6. Pour the beef broth, salsa, or enchilada sauce around the roast.
  7. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  8. Remove the roast from the slow cooker and place it on a cutting board. Shred the beef using two forks.
  9. Skim any excess fat from the liquid in the slow cooker. Return the shredded beef to the slow cooker and stir to coat with the liquid.
  10. Warm tortillas according to package directions.
  11. Serve the shredded beef in warm tortillas with your favorite toppings.

Notes

  • For meal planning, this shredded beef freezes well. Let it cool completely, then store in airtight containers for up to 3 months.
  • You can also use this shredded beef for burritos, bowls, or salads.
  • If you don’t have a chuck roast, a beef brisket or pork shoulder can also be used. Adjust cooking time as needed.
