This recipe transforms simple broccoli into a flavorful, crispy side dish using a smashing technique, garlic, and Parmesan cheese. It is an easy way to prepare vegetables that appeals to many eaters.

Ingredients

Scale
  • 2 large heads of broccoli, cut into medium florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3 to 4 minutes until they are bright green and slightly tender. Do not overcook.
  3. Drain the broccoli well and immediately transfer it to a clean kitchen towel or layers of paper towels. Pat the florets dry.
  4. Place the dried broccoli on the prepared baking sheet. Using the bottom of a glass or a sturdy spatula, gently smash each floret until it is flattened but still holds together.
  5. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  6. Brush or drizzle the garlic oil mixture evenly over the smashed broccoli.
  7. Roast for 15 minutes.
  8. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese over the broccoli.
  9. Return to the oven and roast for another 5 to 10 minutes, or until the edges are crispy and the cheese is golden brown.
  10. Remove from the oven. If using, drizzle with fresh lemon juice before serving.

Notes

  • Smashing the broccoli after a quick boil helps create more surface area for crisping and flavor absorption.
  • This dish works well as a low-carb option alongside main courses.
  • For an air fryer version, cook at 380°F for 10-12 minutes, adding cheese for the last 3 minutes.
