A pull-apart cinnamon-sugar bread made with sourdough discard, perfect for brunch.

Ingredients

Scale
  • 1 cup sourdough discard
  • 1/2 cup warm water
  • 1 tablespoon active dry yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 3 1/2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup unsalted butter, melted (for coating)
  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a small bowl, combine warm water and yeast. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together sourdough discard, sugar, salt, egg, and melted butter.
  3. Add the yeast mixture to the wet ingredients and stir to combine.
  4. Gradually add the flour, mixing until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size. (Alternatively, you can skip the rise for a quicker, denser bread).
  7. While the dough rises, prepare the cinnamon-sugar coating by combining brown sugar and cinnamon in a shallow dish.
  8. Prepare the glaze by whisking together powdered sugar and milk until smooth.
  9. Once the dough has risen, punch it down and divide it into small pieces.
  10. Dip each piece of dough into the melted butter, then roll in the cinnamon-sugar mixture.
  11. Arrange the coated dough pieces in a greased bundt pan or cast iron skillet.
  12. Bake at 375°F (190°C) for 25-30 minutes, or until golden brown.
  13. Drizzle with the prepared glaze before serving.

Notes

  • For a quicker version, you can skip the first rise. The bread will be denser but still delicious.
  • Ensure your sourdough discard is unfed for the best flavor.
  • You can add chopped nuts or raisins to the cinnamon-sugar mixture for extra texture.
  • This bread has a sticky bun vibe, making it a great family breakfast option.
