A soft, olive-oil-rich focaccia infused with pumpkin puree, perfect for autumn baking. This recipe includes starter timelines and topping ideas.

Ingredients

Scale
  • 100g active sourdough starter
  • 350g warm water
  • 500g bread flour
  • 10g fine sea salt
  • 50g pumpkin puree
  • 50g olive oil, plus more for greasing
  • Toppings: fresh rosemary, pumpkin seeds, flaky sea salt

Instructions

  1. In a large bowl, combine the active sourdough starter and warm water. Stir until the starter is mostly dissolved.
  2. Add the bread flour and salt to the bowl. Mix with your hands or a dough whisk until a shaggy dough forms.
  3. Pour in the pumpkin puree and 50g of olive oil. Continue mixing until the ingredients are well incorporated and the dough starts to come together.
  4. Cover the bowl and let the dough rest for 30 minutes.
  5. Perform a series of stretch and folds every 30 minutes for the next 2 hours. The dough should become smoother and more elastic.
  6. Transfer the dough to a well-oiled 9×13 inch baking pan. Gently stretch the dough to fill the pan, being careful not to deflate it too much.
  7. Cover the pan and let the dough proof at room temperature for 4-6 hours, or until it has increased significantly in volume and looks airy. You can also do a cold proof in the refrigerator overnight.
  8. Preheat your oven to 425°F (220°C).
  9. Dimple the top of the dough with oiled fingers. Drizzle generously with olive oil.
  10. Add your desired toppings, such as fresh rosemary, pumpkin seeds, and flaky sea salt.
  11. Bake for 25-30 minutes, or until the focaccia is golden brown and cooked through.
  12. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure your sourdough starter is active and bubbly before beginning.
  • For a richer pumpkin flavor, use roasted pumpkin puree.
  • Experiment with different toppings like sage, caramelized onions, or a drizzle of honey after baking.
